We’re headed into summer and fresh lettuce greens are in season! We got some incredible butter lettuce, arugula, spinach and mustard greens straight from the farm and they taste like small green pieces of happiness. I marinated some pork loin to go with them and added some asiago cheese and hazelnuts. The result was incredible.
Ingredients:
For the Meat:
1 large pork sirloin tip roast
½ a cup of light beer
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon of chili powder
For the Salad:
Fresh Greens- I used a mixture of butter lettuce, arugula, mustard greens and spinach
½ a cup of chopped hazelnuts
¼ cup of shredded asiago cheese
For the Dressing:
½ a cup of olive oil
½ a cup of vinegar
A dash of lemon juice
1 clove of garlic, pressed or chopped
1 small handful of green onions, chopped
Crusty bread, for garlic bread.
To Make the Meat:
Cut the pork loin into small strips and place in a large bowl. Add the beer and spices and let sit for 1-2 hours.
Drizzle some olive oil in a large skillet and pan fry the meat on both sides until desired done-ness.
To Make the Salad:
Rinse, dry and chop the greens.
Chop some hazelnuts and shred some asiago cheese. Set aside. Add these after the dressing.
To Make the Dressing:
Chop the green onions and garlic and blend well with all other ingredients. Drizzle on bed of fresh greens.
Combine all and enjoy!
