Potatoes are my favorite food. I love experimenting with them to see how many different creations can be made from such a cheap and staple crop. These puffy and cheesy potato puffs are perfect for the potato enthusiast.
Cheesy Potato Puffs
8 large russet potatoes
3 strips of cooked, cooled and sliced bacon
2 eggs, beaten
1/2 cup oil
1 1/2 cups of cheddar cheese
1 teaspoon of red chili flakes
1 teaspoon of cayenne pepper
1 teaspoon of salt
2 tablespoons of Parmesan cheese
1 cup of flour
Preheat the oven to 350 degrees.
Chop the potatoes into small pieces and place in a large pot of boiling water.
Boil about 20 minutes or until they are squishy.
Drain the potatoes, return them to the pot over low heat and mash them.
Add the eggs, oil, bacon, cheese, seasonings and flour; mash and mix completely.
Scoop into small rounds and place on a greased baking sheet.
Bake for about 10 minutes or until brown.
These potato puffs were an adventure! They are so delicious I wonder why I never thought of making them in my potato escapades. They won’t be uneaten for long!
