Guess what? April 7th is Caramel Popcorn Day! This odd holiday is the perfect time to enjoy some delicious caramel popcorn. Here’s the recipe:
Caramel Popcorn
Ingredients:
½ cup of popcorn kernels, unpopped.
¾ of a cup of butter
1 cup of brown sugar
1 teaspoon of vanilla
¼ teaspoon of salt
¼ teaspoon of baking soda
Preheat your oven to 250 degrees. Get a tray ready with wax paper on it so the popcorn won’t stick in the oven.
Make the popcorn first. I use an air popper, so whatever method you use to make popcorn, get it going! Set it aside when it’s done.
Start the caramel sauce by heating the butter in a medium pot over medium heat.
Mix in the sugar and let is melt. Stir frequently until bubbly but don’t let it burn.
Let cook for about 5 minutes then add vanilla salt and baking soda. Keep stirring.
Mix the sauce over the popcorn until it’s fully coated.
Line the coated popcorn on the baking sheet and bake until crispy. Stir every 15 minutes, it should take about an hour to cook. The secret to crispy caramel popcorn is letting is cook slowly and completely; don’t rush it!
