Every time I eat Chinese food, I always opt for some form of vegetable fried rice. Although I love the flavor of this simple meal, it is in fact, quite simple. I decided not to waste any more money ordering such an easy dish to make at home, so I created my own seasoning combinations and added them to a simple homemade version of vegetable fried rice. The perfect companion for stir fry, teriyaki chicken and more.
Vegetable Fried Rice
Ingredients:
1 cup of chopped green beans
1 cup of chopped carrots
½ a chopped onion
2 tablespoons of vegetable oil
3 cups of cooked white rice
3 eggs, blended with a fork
Seasonings:
1 teaspoon of coriander
1 teaspoon of Chinese 5 spice
1 teaspoon of Szechuan salt and pepper
½ a teaspoon of paprika
Heat the oil and onions in a large wok on medium high heat.
Add the carrots and green beans and sauté until soft.
Add the white rice and cook for about 15 minutes, stirring occasionally. You want the rice to be crunchy on the bottom, then stir it in.
Add the seasonings and stir.
Add the blended eggs and cook until eggs are cooked.
Enjoy with your favorite entrée!
