Have you ever tried oatmeal not with berries, cream or brown sugar, but with savory flavors? As someone who prefers salts to sweets, this take on oatmeal was right up my alley. Made in a similar way to risotto, this savory oatmeal uses whatever veggies are fresh and in season, broth and spices.
Ingredients:
1 cup of uncooked oatmeal
2 cups of chicken broth or vegetable broth
1 tablespoon of butter
Thyme
Scallions
1 handful of mushrooms, any type. I used some delicious locally sourced oyster mushrooms from the farmer’s market!
1 green bell pepper, diced
3 tablespoons Soy Sauce
Sesame Seeds, sprinkled on top.
Heat the butter in large pan and add mushrooms and garlic.
When toasty, add diced green bell pepper and green onions. Cook for a minute.
Add 1 cup of oatmeal add 2 cups of chicken broth. Cook until liquid is evaporated, stirring often.
Add 3 tablespoons of soy sauce and stir.
When oatmeal is cooked and liquid evaporates, it’s done!

I have never thought about doing oatmeal with savory flavors! What a great idea! I have my favorite flavor combination I stole from budgetbytes.com — Dragon Noodles. You combine brown sugar, soy sauce and rooster sauce and put over noodles, but it’s definitely not the healthiest option. I’m definitely going to have to try this!
